Spec me: set of Knives and Pots & pans

Stretch another £20 or less shopping around and buy yourself the best quality pans you can. These have fantastic heat distribution and every single time you turn on the tv and see chefs cokking they are almost always using analons.

You can normally snag the 5 piece set like the ebay listing for under a £100.
 
It's definitely worth spending wisely on pans and I'll second the recommendation for the Raymond Blanc Hard Anodised range - I've just swapped out all my old stuff for a set of those and they're faultless.

Until I take them off somewhere to cook and find out they've got an Induction hob...

As for knives, forget about buying a huge set and concentrate on buying one large-ish main chef/kitchen knife, one small utility knife and a medium-sized serrated knife. The Robert Welch range are excellent, albeit slightly strange handling due to the curvature of the blade. I can't get on with them but if you can, they're excellent knives.

Unfortunately both things exceed your budget by some way, but you'll be spending money wisely and they'll last you for as long as you care to look after them.

Le Crueset is ****e that sold well because it's seen as one time fashionable. Crap for actually sticking on a hob as a saucepan etc.

I'd make a lasagne in a oven dish of theirs but for everyday cooking they are pap.

Do you not find that the pattern on the inside drives you up the wall?

I desperately wanted to like Circulon as it's usable on Induction but I just couldn't get on with it, no matter how hard I tried.
 
My Meyer Anolon hard anodised non-stick pans are going in the bin when the sales start. 4 years old and haven't lasted well at all. Been most unimpressed with them. Nice pans to start with but they can't take being used and abused like my older Tefal ones can. Waste of money if you're planning to use them imo.

I had the experience the other way round. My Tefal ones went in the bin after 2 years.
 
Tefal teflon pans are good enough, can't see the need to spend even more.

Circulon cookware has circular pattern on the inside base of the pan. Tiny concentric circles that are supposed to help you cook with less fat but just serve to annoy the hell out of me and put strange shapes on food!

Assuming you've looked after them properly and have washed them according to Meyer's instructions, you could get them replaced with a new set if you drop them a nice letter.

Or if you've treated them like crap and have had enough; bin them.

I know three professional kitchens that use Meyer cookware and they get hammered all night, every night and still look like they've been used in a domestic kitchen.
 
another vote for anolon professional pans.

Just get a set of nylon utensils instead of metal. Wrecked my first pan with a mixture of dishwasher and metal utensils, the replacements look brand new.

I also have a Stellar 6000 pan, which is identical to the anolon, but can get them in different shapes and handles. Got this beast and it's excellent for roasts or anything large which you want part hob part oven. Although so big, doesn't fit in my new rented house which has a stupidly small gas oven. fitted fine in my last house though. One reason I got it was non of the anolons have small handles and the larger ones don't fit in a normal oven.

I've actually got a set, and I hadn't even noticed the pattern - let alone any problems!

I know they're only tiny, but it still drives me up the wall.

It's a stupid thing to dislike about them as it'd save me having to borrow a set of pans when I cook on Induction hobs!
