What's the jailbreaking procedure like? Hit and miss? Easy?

I strongly doubt that - a customer is a customer. Three do not make a loss when you use 2G; sure they have more overheads for paying for the 2G network but it is still profitable for them. So why would they boot you off?The iPhone isn't 3G. 3 don't own a 2G network and so piggyback on Orange's 2G network. Orange charge them a lot of money for this privilege and so 3 take a very dim view of anyone trying to use a 2G phone on their network. You'll likely be kicked off their network for using the iPhone.
O2 used to provide 3's 2G service, but I believe it was taken over by Orange.I'm also pretty sure Three piggy-back O2, not Orange.
Im heading to canada next week, im assuming i can grab a 16GB one and jailbreak/activate it and drop my vodafone sim in it and snyc with itunes no problem when i get back?
They don't sell them in Canada yet

No, 3 make a loss every time you make a 2G call. It isn't much, but it adds up.
If you examine their phones, they've intentionally disabled any "2G only" mode that the phone might have. It's also in their T&C that you shouldn't use a non-3 supplied handset on their network. However, it seems that they can't detect (or don't seem to care about) the difference between a 3-branded 3G handset and a regular 3G handset.
What is your source? No, 3 make a loss every time you make a 2G call. It isn't much, but it adds up.
