If either of you want to be half decent (or at least to make it easier to be half decent) you'll put motion controls back on again . Motion controls are great once you get the hang of it and make it much easier to play with the additional pro of making you much more accurate. It's a pity that most FPS/3PS don't have motion controls tbh.
I also prefer the Pro controller although some prefer the joycons.
I use a Pro controller and find it (aiming) quite straight-forward and manage quite well.
One thing that bugs me though is having people in your team that do not play (Just stay at the spawn point). 2 or 3 vs a full 4 squad is an uphill battle (though not impossible).
Splatoon has by far the best non-mouse controls for a shooter when using motion controls. I wish all shooters had controls so good that there is no need for auto aim in the game.
Once you get into the higher S+ ranks (the ranks go from 1 to 50 once you get out of the noob leagues) then you hardly ever find quitters/afkers.
Joy cons are way better than the pro controller for me. It's much more intuitive to point with your right hand to aim than to turn the controller like a steering wheel when using the pro controller.
Also, I can press the dpad up button and b button without moving my thumbs off the sticks which is really important at high level play.
I was skeptical at first but once I got into it there was no going back. Some people do OK without it but generally at higher ranks you'll get wrecked because you will be so much slower to react/get your aim in. You can get by in Turf War but in the modes that open up later I think you will be frustrated if you aren't using motion.
