This is possibly to do with bad fan curves? Often you will find ramps and spikes due to sharp default curves in the bios that allow up to a certain temp and then somewhat over compensate. Set custom fan profiles and the problem will be gone.

At the moment one of my machines is also an old X58 W3530 and it's a horrible default curve, allows the CPU to get up to the 60's with little noise and then goes mad aggressive to bring it back down, so you get this dramatic cycle.

You can chart out a custom profile in the bios that'll eliminate this with a better balance between temp/fan operation.

Also he aware gigabyte doesn't account for the 20 offset so your 0 to 80 range really is 0 60 making fan curves much more annoying to iron out... Because 1 maths and less ra ge fir Dan's to ramp up
