Once the initial price-gouging dissipates and the supply stabilises you'll be looking at around £400-£420 for the 7970, which is better value than the GTX580 3Gb and not an unusual/unreasonable premium for the fastest single GPU card. Prices will drop sharply when Kepler is released, but until then AMD have the best technology, and users can expect to pay a premium to access it.
With the 5870 AMD were trying to obtain market share, and gain more credibility in the high-end market. Now that they have a good proportion of the market share there's no reason not to price their cards at what the market is willing to pay.
