Dehydrate?? Won't that dry the ham? :cry:

Not at all and tbh it is one of the best ways I've done Gammon.

Twice I've put the tray at the lowest level and once filled to the bottom with a Whiskey and the other time with a cola.

I've also done the same with beef roasting joint and again, it comes out really nice.

Just keep an eye on the temps.
 
Ok, so dehydrate function at 80/90 degrees, crisper tray on base - and put liquid in the bottom? As if steam airfry? The joint is too big (tall) to put the tray on the air fryer height

The recommendation is no liquid, but I tried and it doesn't cause any issues, so could be done without, but might add a slight flavour....

I'm still at first steps with dehydrating gammon, so would say try 90°c for 4hrs and check with a food probe for what temps you are getting. I usually aim for around 75°c
