AMD or Intel?

The i5 is a good CPU for gaming, and if you overclock it to 3.4GHz then it will out perform the 965 (thats for your video editing part) but tbh, they are both good setups so go for any
 
My only concern with AMD was that their chips generally ran a fair bit hotter than Intel's. i am not sure if that is still the case or not, and while overclocking will be dabbled with i wont be pushing too hard, just a tweak here and there.

Phenom II runs cooler than an eskimo's fridge - well, they run cool anyway. This won't be a problem with a half-decent HSF.

If you're dabbling with overclocking but not pushing too hard, you'll get the 965 a lot higher than the 750 for the same effort. The 965 will be a quick session of "up the multi, stability test, if it's unstable up the voltage, repeat until you hit a temperature or voltage you're uncomfortable going above". The 750 will be a lot more hassle to get it to the same clocks as the 965 will manage, and you'll still have scope with the 965 to fiddle for performance rether than raw clock.
