Have you spoken to SEAT? There's a thread on the seatcupra.net forums about goodwill gestures if your order is further delayed.
Ordered my new Leon FR ST (1.8 TSI) back at the end of August through Motability to replace my current Leon FR ST 1.4 TSI.
Due to some options I've added it's got a built week of 4 - end of this month. Should hopefully get it mid February.

We eventually got our 2.0 Excellence Technology estate during the first week of November.
When we ordered early June we got told it would be first couple weeks in October. Then when they gave us a build date 8 weeks after ordering they claimed that would be 4th December to which we kicked off..... They sorted it all out, gave us a cheque from VW Group to the sum of £250 for compensation for how horrific their customer service is and as I say, now had the car since start of November and very happy with it.
The wait/build times and the customer service communications from SEAT are terrible. Between dealer and SEAT UK it is the second worst customer service I have ever received. The only circus to have beaten them to the number one spot is Sky.
The deals on motability early in the year for top end SEAT's was almost too good to be true and the non motability deals were pretty damn good also so I think they were seriously swamped with new car orders. They must be getting through them now because during the summer I remember seeing barely any Leon estates about at all but now there is heaps of people with same car as us kicking around
There is also masses of those Vauxhall Mokka X on the roads you will notice, as they were also cracking deal on the Motability scheme. Those people should have done their homework as they are shocking engine options wise but at least Vauxhall were clever enough to stockpile masses of them new build for the swarm of orders.

It always seems to happen whenever you change car - everyone and their dog suddenly seem to have the same car as you, but prior to getting the car you've barely spotted any.
