Official servers being laggy doesn't mean anything, official servers are dogshit unless you like waiting 20 years to tame a Dodo. Unnoficial servers are better as they come with reduced tame speeds most of the time which cuts out a lot of the b/s. Even 50% faster tames make life a lot more enjoyable in Ark.
If you make kibble then you can tame high level pets really quickly. We just kept stacks of various eggs in the fridge and made them up when we knew what we were taming

Running around on the beach, I'm getting 20-30 FPS, doesn't exactly look pretty either...

It just seems so similar to Rust, H1Z1, The Forest, etc. none of which interested me beyond the first half hour.

To be fair to the game that stament is rubbish, a lot of people play single player and build epic base just for the design and fun, then mess with dino's. Might not be right for you (or me) but does not make the rubbish.
I played this when it first appeared, can you still loose everything on a PvE server if your wood house is smashed and your looted whilst logged off ?
Not really, given the simple fact most of the games design is based around open world PVP / PVE.
Had a try at SP and PVE, both are nothing vs a proper PVP server with a tribe, i am the owner of a tribe with over 15 excellent and very active players, also managing alliances with 3 other tribes with similar size fighting off such issues as Congo Virus and a chinese invasion etc, we now 'own' our official server and manage it in a way that new players don't get wiped out without having a chance to build / enter into a fair fight.
Don't be a derp and build huge wood bases, get into metal ASAP.
