Sufjan Stevens - Seven Swans = Similar to Jose Gonzalez. Also Check out Illnoise and Michigan.

you can buy an MTV best of unplugged, and that is a brilliant album. Loads of variety in it.
My favourite acoustic will always be the unreleased Pearl Jam, and Nirvana Unplugged.

Has to be mentioned, just got Neil Diamond - 12 Songs. Really has some good moments.
