Best mayo for fries

Put 2 egg yolks in a metal bowl - important for incompetents like myself as it keeps the mixture cooler. Drizzle a very little oil - a drop or two - into the yolks and whisk it in. Add a little more, whisk some more. Repeat, gradually increasing the amount of oil you add at a time. Add the mustard, a good grind of pepper, a pinch of salt, and crushed or finely chopped garlic to taste (I use 3-4 segments) and whisk it all in. For a luxurious mayo add in another egg yolk at this stage. Leave in a sealed bowl in the fridge overnight to mature.

That's actually not correct in professional chef terms.

The egg yolks would need to be cooked as a "sabayon" initially and a metal or glass bowl doesn't make a huge difference but glass is preferred. A vinegar/sugar reduction would also be used in the initial prep of the yolks before making fresh mayo.

I thought that was only for sauces based on Hollandaise (i.e. with liquid clarified butter). Anyway, I did state that I was incompetent.

BTW wrt metal vs glass, I do find my mayo splits far less often when I use a metal bowl.

This is the best store bought I've found "Delouis Mayonnaise". Doesn't have sugar in like others, the price has gone up a bit in the last year or so though. Actually tastes of something rather Heinz/Hellmans.

It's fine to use raw fresh yolks to make mayo if it's only you and your family eating it and you wanna run the risk of salmonella etc from farmed or free range eggs. However, on a safety level, it is better to cook (sabayon) the fresh yolks as that's the equivalent of pasteurisation for commercial egg yolk sale. Hope that helps...
 
So we are making our own Mayo now on this forum?

Next it will be ‘I only buy Gucci belts as the leather is much better quality’ :D what’s wrong with Hellmanns? Eh?! lol

Very few of us are Dutch or German on OcUK fella :D

I found this however. This seems to be the main one. Basically home made Mayo but jazzed up.

I did a stint in Germany back in the late 80s, and I was living off fries and mayo. Should've bought a shipping container of the stuff back with me.
