The best one will be the one that provides the capacity you need, is relaible, and meets you budget.
Personally, I'd recommend the one I own, that's the Samsung 840 EVO 250GB. It has a good balance of price, performance and reliability.
Perfect if you are happy to have a modest number of games installed (4 - 6ish ?) at any one time. If you really want to have more games installed, then it's going to get more expensive to buy a 500GB or even 1TB SSD. 250GB is fine as long as you don't want to keep too many games installed at the same time. A secondary mechanical drive is not a bad idea. If you really want to have a large variety of games installed at once, you could install you lesser played games on the HDD. With an SSD as your OS drive, you may well find that some games load more quickly, even if they are on the HDD.
No harm in getting a 250GB now and seeing how you get on with it. Like I said, if you regularly play a lot of games, you may want more space. If you have just a few games "on the go" at any one time, then you might not need to buy another drive for a while. Some may advise that installing games on an SSD doesn't bring much benefit. It certainly won't increase frame rates or "eye candy". What it does do is decrease loading times, which I think is a good thing, others may not be too bothered.
If you add a second 250GB at a later date, you could pit them into RAID mode and that can further increase performance. I don't see the point though, as the performance of modern SSDs in modern systems is pretty well fast enough unless you are really impatient !
