best way to cook cod............

I love it in a fish pie, along with some smoked haddock, a bit of salmon and some prawns

or

roasted with some tomato and red peppers


or cooked simply with good old parsely sauce and creamy mash

Skal, please dont think that I am saying that *all* supermarket cod is unsustainably caught - but greenpeace have clear guidelines on their website about how most supermarkets are selling 'badly' managed cod.

The also list those species that are in danger here.

Lastly they list fish that are safe here.

A friend of mine stopped eating trawled fish the moment he scuba dived and swam out of a kelp forest to see an underwater wasteland where the dame and by catch was horrific (he showed my the underwater photos he had taken).

If you can reassure me about the fishing techniques that your suppliers use and tell me where to buy your fish I will gladly do so.

But the sad story is that human beings just don't seem to know when to stop until they have destroyed something.
 
It was particulary your comment about there not being much cod left.. worldwide this is far from the truth.....Greenpeace for me is another issue entirly, I deal with them enough as it is, they have their agenda which may I add is correct in principle and I have mine.

As for buying sustainable cod...generally anything caught by the icelanders or norwegians will suit your needs, Their goverments have been ensuring that the fish stocks in and around their waters are well maintained and managed now for years now...it is in their interest to do this as 'fishing' is the main economy of these countries and if the fish stocks were to collapse it would be a very big problem for them.

Do not stop eating cod!!!!!!!!!! (it keeps me in a job too!!)

Just finished my cod and baked potato.

Very nice. Took ~25 mins on gas mark 6. All hot through the middle so thats was all good.

Lovely meal hope there are plenty more cod about :p :D

Yep totally agree about raw ingredients. It's not that i cant cook , its I don't know how to cook things if that makes sense :confused:

fajitas are going to be filled with chicken, red and green peppers and mushrooms which I just found out I like :p

If your all wondering why I have just started cooking its because my parents have gone on holiday and I dodn't fancy domino pizzas every night.

If the truth be told actually enjoy cooking :)

Proper cooking is very relaxing, especially if you have a tv/radio on in the back ground..

Nothing better(well until you eat it) than just chilling out slicing and cooking raw ingredients

Moving on to chicken wrapped in bacon with green and yellow peppers stuffed inside. served with homemade jacket potato wedges covered in spicey stuff :D
 
To the OP.


Get yourself down to your local monger or supermarket and buy yourself a Wild Cornish line caught Seabass.

It has great taste and it can taste even better when you know the lengths the fishermen go through to get just the one.

Yes, you will get bones. Cooking it whole is the best way. You monger can get it cleaned for you. So all you have to is bung it in the oven and your away..
 
you should do Brannigan's Cod

Brannigan's Cod is like Brannigan's love - hard and fast

if you like fish, but are getting bored of the usual way of serving it, give this a try. It is very simple, and despite the addition of chilli, isn't very hot (of course you can change that by adding more!) Yoghurt is very good for you, and low in fat and it's creamy texture complements the cod well. This doesn't have to use cod, if you prefer you can use any firm fleshed white fish, for example coley that you prefer. The quantities shown here serve 2. Serve either with a green salad or steamed vegetables and new potatoes.
Ingredients

* 2tbsp Natural yoghurt
* 1 tsp paprika
* 2 cloves Garlic, finely chopped
* 1 Red chilli, finely chopped
* 1 tbsp Fresh thyme, chopped
* 1 tbsp Fresh chives, chopped
* 1 tbsp Fresh marjoram, chopped
* Juice of 1 Lime
* 250g Cod steaks

Method

1. Mix all ingredients except the cod into a sauce.
2. Coat the cod with the sauce.
3. Fry the cod and sauce over a medium heat until the cod is cooked through and the sauce has reduced slightly (approximately 10 minutes) turning occasionally.
4. Serve immediately.

Experiment. Once you learn what ingredients and seasonings go well with what, and some basic cooking methods, you don't need recipes :cool:
 
Heres a nice and tasty quick one.

Get yourself a piece of salmon tail fillet.

On the non skin side, season lightly with salt then spread crushed tropical mixed peppercorns on the fish (The red green and black ones).

Bung under a medium grill for 5 minutes per side.

Get yourself a mediteranian salad pre-packed (It's a lot easier when cooking for one), add a french vinegarette, (Just peal the corner of the pack a bit, pour a good slug in, close the cover again and shake well).

Slice some white tin loaf thickly and butter it.

Enjoy!, and all done in 10 minutes.

Ah yeah the chicken was spot on!!!

Tonight i'm cooking salmon and potato wedges in spice.

Any ideas on the salmon anyone ?? I was thinking cooking in oven with foil again ?

Or is it better to grill the salmon.
