I tend to fry salmon in butter and olive oil then do a hollandaise sauce.
2 egg yolks
1 tablespoon of lemon juice
4-5oz of butter
simmer some water in a pan, place a bowl so it stays above the water and whisk the egg and lemon juice in it til it starts to change colour, add the butter a bit at a time till it's all melted. Should be like a double cream consistency when done.
