the foil thing is always a winner, but salmon is good grilled too. Also, you might think about pan frying it. Salmon and tuna both benefit from a nice hot pan so they go a bit crispy but still slightly pink inside.
 
I tend to fry salmon in butter and olive oil then do a hollandaise sauce.

2 egg yolks
1 tablespoon of lemon juice
4-5oz of butter

simmer some water in a pan, place a bowl so it stays above the water and whisk the egg and lemon juice in it til it starts to change colour, add the butter a bit at a time till it's all melted. Should be like a double cream consistency when done.
