OP if you already have Freesync stick with AMD.

To add what has already been stated you might struggle either way with Ryzen to hit 144hz reliably even with a 1080 depending on title. I personally reduced my refresh to 100hz for a smoother performance, that was at 1440p but depending on game optimisation it will struggle to deliver the frames your GPU wants to render.
 
I thought the 480 was a bit lacking on 3440x1440. Sure, you can turn several settings down to get reasonable frame rates, but my Vega is doing so much better. I surely wouldn't want to run that card for years, I was only using it temporarily.

As am I, I sold my reference Vega and I'm currently using the 480 until something better that's Freesync capable turns up,
My Red Devil 480 is a decent card so I may go for Powercolor's Red Devil Vega in the new year, Until then the 480 may not be ideal but it does okay,
I tend to target 50fps by tweaking the settings and that with Freesync enabled gives me a playable experience,
For the OP who's running 2560x1080 a 480/580 will provide an even better gaming experience than it does for me at 3440x1440.
I had a 144hz 2560x1080 monitor for a couple of weeks last year and I used it with a GTX1060 which had no problems gaming at that res.
 
Yea my Monitor has LFC though with a Range from as low as 50 FPS so don't need to be hitting 144fps the HD 7850 is ok for now but getting around 40 fps on low settings in destiny 2 :(

Also just running it in 60hz atm
