Just to check, does this only hold SSD's in brackets? So I couldn't do 6x 3.5" and 1 ssd? It would be 5x 3.5" and 2x SSD?

5 x 3.5" & 3 x SSD

5 x 3.5" as follows.

2 on the upright hdd mounting plate (facing in the case)
2 on the floor of the case
1 in the "optical drive" bay (using adapter)

3 x SSD's as follows

2 on the upright hdd mounting plate (facing out of the case)
1 in the "optical drive" bay (adapter lets you use both at the same time)

Are the MATX and the mini ATX cases the same physical sizes?

Yeah, just the insides which is different.

They cant give exact dates as to when stock arrives as its out of their control what with customs and delivery companies etc

Swap the panels over! That is what I have done, makes more sense to do it that way too.
