Bruges over Christmas

We're going to Bruges over Christmas for 4/5 nights with our dog, over both 24/25th.

Any recommendations? Obviously nowhere has their Christmas menu out yet so difficult to judge what we want to do/where we want to go on 24th (their Christmas Day) and 25th.

Been to Bruges twice before so set for most things chocolate and bars, but those trips were weak on the restaurant front.
 
We went over NYE last year. There was a really nice gin bar called the gin club I think. Even if you don’t like gin (2 people in our group didn’t but still loved it there) it’s well worth a visit. The owner was a great bloke, we asked him for recommendation where to eat while there and he recommended a Mexican/tapas place, we unfortunately were not able to go as it was fully booked the entire stay for us but he highly regarded it. It was called tapasbar est and upon googling it just now I still regret not being able to go. He did recommend another place that was also fully booked but can’t remember for the life of me what it was called.

Our best meal our the trip was probably at Het Visoen. Was an Asian/Flemish fusion place I’d recommend highly.

The beer wall is a must visit as well, it’ll be rammed but it’s a cool place to visit.

Someone else has already mentioned it but de halve man brewery tour is cool as well.

We stumbled across a cool bar one night as wre walking back to the hotel. Probably won’t help much but someone else may have been and remember the name. It was like a big old warehouse that had been converted to a bar. All open plan and had some cool decorations around.
 
We're staying at Guesthouse Bonifacius, mainly because it's dog friendly and looks super cosy/intimate for Christmas; I think they've only got 3 rooms. It's also highly reviewed.

Bank 1869 kept coming up in guides.
