Protein rich foods are pretty much fully digested in the small intestine so eating several pounds of meat a day won't lead to brick sized stools, the ash (waste) from a pound of meat is approx 1tsp (5 grams), if you have large amounts of fats/proteins in your stool then it's likely you have malabsorption problems and should probably see a doctor. Stool size is pretty much dictated by bacteria and dietary fibres.
