Changing permissions on a 'local disk' run in a USB caddy?

My grandmothers laptop decided to give up on her the other day and so she's since replaced it with a new machine. I told her I'd recover her files from the hard drive (it was mobo failure so the HDD was fine) using a USB caddy I had.

I transferred the hard drive to the caddy today and have it plugged in to my machine, however when I try to access her documents it says I don't have permission. Is there any way I can access these files? How do I change the permissions to allow me to read, write and copy the files?

run cmd from the drive's root,
icacls <DriveLetter>: /Grant <UserName>:F

then

takeown /a /f <DriveLetter.:\

eg

icacls F: /Grant Administrator:F
takeown /a /f F:\*
