Cheese on toast rocks with any cheese. But if I had to pick one -

Cathedral City mature cheddar.

I like the Tesco cheapo mature cheddar slices, but sod the worcester sause...try light soy sauce and grill for 2 mins. Heaven on bloody earth!

White mature cheddar (the stuff that doesnt melt too well), mixed with red cheddar (melts) and Mozerella (Stringyyyyyyyyyy)

I love cheshire cheese on toast, although it technically isnt ment to work, but there is just somethign about the crumbliness for me.

Seriously strong cheddar is THE FINEST cheese on toast cheese of all. It's great with a few leftover baked beans under it, then grilled
