cheese on toast? best cheese ?

Just one type of cheese?

You need at least Brie, Edam, Cheddar and Mozerella. Grate the ceddar, put down a thin layer, put some smokey bacon on, cover with more grated cheddar, put a few small slices of edam on, put the other two on in chunks. :)
 
So long as there is marmite under the cheese any mature cheddar will suffice :)

Under? What sort of a heathen are you? :p Spread generously on top of the cheese is the only way to go, Marmite (or yeast based spread of your choice) needs properly exposed to the heat of the grill.

I'd agree though any mature cheddar will do in combination though, preferably as strong as can be found. If being really rather decadent then multiple types would be used but that is a bit more hassle.
 
Any Extra Mature Cheddar (proper strong stuff though none of this Cracker Barrel/Cathedral City Mature stuff which tates mild). Tintern is also very nice. For variety 5 counties is excellent (Derby, Leicester, Cheshire, Double Gloucester and Cheddar) I used to like sage derby but can't get it up here anywhere :( .
 
Double Gloucester is the best cheese you can use, it melts well onto the toast and leaves a good texture. What ever you do don't use a crumbly cheese like Whensledale, it just doesn't work.

By far the best cheese, keep wanting more! Even worse after they put those ******* adverts on the TV showing the people eating cheese on toast. Ran down the shops the day after and bought some :/

Totally agree with that, cathedral city calls itself mature but it really doesn't taste it.
