Cheese on Toast

lightly toast the bread. Bit of lea and perrins on the bread with salt and pepper, add the cheese and grill. remove, add some chopped chives, put back in for 10 seconds.

loving this thread to an extent it's making me want to go and make some cheese and toast!

anyway, I start by slowy toasting one side until slightly brown.. then i turn the toast over and leave to grill for a thew minutes then take the toast out leave the toast on top to cool, whiles preparing the cheese (thin slices) of Mature chedder :D!. and then once the cheese is on top of the toast, leave in the gril to slowly melt.
 
Crocque Monsieur anyone? awesomeness! brown sauce with the cheese. I have a blowtorch I use if I cant be bothered to wait for it to grill, but be careful or the cheese releases all its fat and the toastie becomes oily!

I toast the bread a bit on both sides under the grill, on one side plenty of chilli sauce or fresh chillis, cheese on top, then plenty of lee & perrins over it. Back under the grill to melt. Yum :)
 
In France, even McDonalds have a go at cheese and ham toasties

Grill bread until dark golden on one side, grill the other side until it is just about to start to colour. Top with slices of extra mature cheddar (the sort that hurts your toungue and makes it go lumpy!) and grill until bubbling. A good extra mature does not need any other flavouring..... Lea & Perrins can be used if you use an inferior cheddar ;)
 
I do mine this way:
-grated cheese,
-sliced spring onions,
-bit of mustard,
-sliced tomatoes,

Mix cheese + onions + mustard all together, put on bread then put tomato slices on the top, put in very hot oven for 7-10min.
