mmmm I shall trump you all. 3 months ago me and a mate decided to do an experiment and make our own cheese! 1 huge catering sized pan, 16 litres of the finest gold top milk, 2 months mimimum to mature and yes we have a winner. I refuse to believe any of the cheeses mentioned would beat it mmmmm
 
Mozzarella, however i find stilton really nice melted onto anything but it doesn't fit your criteria.

Cheesy chips is peasant food.
Peasant food is good food.
Posh people food gets old quickly, lobster, snails, foie gras.
Fancy cooking, it's just so unsatisfying most of the time.
 
likes already been said, stilton is unbeatable melted.

I love having giant mushrooms, wrapped in parma ham with melted stilton..... yummmm...
