Christmas dinner prep

Slightly different to the other thread. We're making Christmas dinner this year and I'm keen to minimise fuss on the day. I'm thinking through things that can be done ahead of time and I've come up with the following:

Stuffing
Red cabbage
Cranberry sauce
Parsnips - peel and blanch ahead of time and vacuum seal to preserve ahead of roasting on the day
Potatoes - peel, parboil and freeze for roasting on the day

Any good time saving tips?
 
Since you can clearly cook, ditch the turkey and have a beef wellington instead.
Have a cold dessert, prepared the day before.
Cold starter - gravelax or smoked salmon.
White wines in a cool place the day before, not shoved in the fridge with the bubbly.
 
Frozen spuds
Frozen parsnips
Will make the red cabbage beforehand
Crown the turkey and prepare the Turkey roll for sous vide overnight (actually I might sous vide the turkey this year as well)

Honestly frozen roast potatoes are so much easier.

Boil kettle, take lid off Pot Noodle, pour in water, wait 5 minutes, then lob in bin and open a bottle of scotch instead.
Been doing it for years and every Christmas day is awesome :D
 
It's the future...as we all know it's the crispy bits that matter. Let go of your spud prejudices and give it a try (has to be the duck fat version of course)

Ribeye steak with creamy pepper sauce, chargrilled onions, shrooms and garlic served with french fries.

Easy to cook and so much nicer than bland turkey. That’s my xmas dinner :)
 
I did beef Wellington the other year and pre prepared pretty much everything bar brocoli. All carrots, parsnips, potatoes, pigs in blankets, beef etc were cooked or sous vided a few weeks in advance then just got them in the oven on the day. Only thing I needed to do was defrost the beef the day before and chucked it in the Wellington bits in the morning and then into the oven for finishing.
 
We peel all the veg the day before and leave them in a saucepan of water.

Probably will also flavour the turkey, and do the stuffing.
 
Mum has made:
. Cake
. Mince pies
. Stuffings (put in takeaway foil containers)
. Pigs in blankets
. Brandy butter
. Cheese straws
. Red cabbage

I have bought the booze

Just need to pick up the turkey (or beef sirloin joint if avian flu is an issue) on Xmas Eve.

We keep the turkey in the garage in a cool box with ice packs and change them every few hours.

Not had an issue with the turkey kept this way
