Christmas dinner prep

How my mum keeps turkey moist.
Roast in a roasting bag
Put a cut lemon and onion and put in cavity
Put rashers of streaky bacon on thickest part.

Then rest turkey for 30 mins (40 if it’s a whole bird). People forget about this and carve straight out the oven. Resting makes the juices go back into the meat and makes fibres relax.
 
how to keep turkey moist .. cook to 65c chill it straight away ..blast chiller or stick it outside covered for 40 mins (if cold enough ) up to 2 days before.. slice reheat to 75c on the day in a little water ---veg prep 2 days before ... pot's on the day or steam/boil day before ..
it's fine i'm only cooking for 260 this yr :p

We keep the turkey in the garage in a cool box with ice packs and change them every few hours.
cool box is a good idea - you mean if you've bought it frozen/fresh a week before, though ?

we always put sausagemeat+sage stuffing in the backend, potato in cavity;slow 160 ,initially upside down, foil covered, a few hours, and crisp it off as roast potatoes go in, before it's rest.


Parsnips - peel and blanch ahead of time and vacuum seal to preserve ahead of roasting on the day
Potatoes - peel, parboil and freeze for roasting on the day
i'd be dry running those to ensure texture is not destroyed, especially if freezing.
 
Well, it's a bit late to start boiling the sprouts. If you put them on now they may still have some flavour and texture, which no-one wants... ;)
