Can anyone explain to me what this colour gaumet thing is please?

I see this specification pop up all over the place but I'm not 100% what it actually means?

Is it a new marketing hype thing or is it something you can actually notice in use?

For the average user it's hype. Web browsing, office work, gaming and watching video content only requires the standard 72% NTSC Gamut or sRGB. Most monitors sold today are 72% and as such most content is optimised for that, so the extra gamut is a waste.

If you are doing pro photography that is intended for print, or doing pre-press stuff then high-gamut would be useful to you.

edit: I should also add that, at least in the case of the Dell 2408 wide gamut monitor, you'll need a colorimeter to properly tame the over-cooked out-of-the-box colours to be anywhere near accurate.
