Cooking Gypsy Tart with Blighter

Gypsy Tart is a LOVELY cake that is rarely heard of outside of Kent. So I thought I would share the delight with you all!

All you need is a tin of Evaporated Milk (~400g), 350ish grams of Dark Muscovado Sugar, and a pastry base.

Preheat the oven to Gas Mark 6

Pour the Evaporated Milk and the Sugar into a large bowl, and whisk for 10 minutes until coffee-coloured and a 'sticky' texture. (electric whisk unless you've been using those PowerBalls for a few hours a day!)

Now, pour the mixture into the Pastry case and stick in the oven for around 10 minutes. This should thicken the mixture inside the case and make a lovely cake!

ready made pastrys so good, it's not really worth making your own. unless you want something a bit different.

So where's the pics?

I take it the mix sets solid?
