I'm about to attempt to cook some rump steak. In the past ive always managed to mess my steaks up, they usually end up with burnt oil all over them.

I'm using a griddle pan on the hob, should i whack it on full blast? how long shall i give the pan to heat up? Also should i rub the oil in the steaks before, or just put some in the pan.

Ive got a choice of either olive oil, extra virgin oil or some walnut oil

I also like mine medium to well done, so how long shall i give them, 3-4 mins each side?

Thanks!

Do a search this topic comes up every day pretty much.

Oil always goes on the steak, the steak should be at room temp.

Timing depends on the thickness of the steak really.

make sure the steak is a room temperature,
rub oil into it and season the steak with salt and pepper (both sides)
place on a hot grddle pan for say your 3-4mins each side and don't move once its been turned/placed on it.
Leave to rest on a plate with covered in tin foil for 12 minutes.

Enjoy

EDIT: I use olive oil and its fine

Of course you're messing it up, you're cooking it well done.
Eat it raw, or do the following:

Dry pan, room temperature steak salt and pepper on the steak.
VERY VERY hot pan.
Don't move it.
One-2 minutes each side.
Let it rest for 4 minutes.
Nom.

Post steak cooking report:

Better than usual, although probably a bit over done, was a bit dry, I didn't drip the rested juices over them which was probably why. Noticed some burning on the pan (too much oil, or too little?)

DO NOT TENDERISE!!!!

I like mine rare/medium rare.

Basicaly i would usualy let my steak marinate for a few hours in something.

Easy way to do it is half an hour before you cook it bring it out leave it on the side of teh cooker let it reach room temp so that it cooks through quickly.

Put a little olive oil in the pan and rub some into the steak with a bit of pepper and some salt if you wish, when it starts to have smoke rising off it lay the steak in the pan laying it away from you as to not get oil splatter in ur face.

Leave to sit there for approximatly 3 and one half mins to 4 mins for medium done.

Flip over let the other side cook for same amount of time.

Get a nice bit of butter something you like drop it in the pan. Use something you can pick the steak up with and raise it on it sside tilt the pan and hold the sides of the steak to the pans edge so that the side cooks about 30 seconds to a minute for the sidees each.

then take a spoon and chuck some of that melted butter in the pan over the steak take it out the pan let it rest for about 10 mins to 20 mins then eat.

YUM.

I usualy add some salt to my steak when im cooking it not before otherwise it looses some of the moistness.

Sorry all of this was a bit vague but its just a general way to cook a steak nice n yummi without having to do a bizzilion types of seasonigs.

Its a mans steak without a load of fancy tosh.

I love mine rare personaly i cook it 2 mins each side on a high heat.

The pan was probably too hot.

Take the steak out of the fridge a good hour before cooking.
Rub with canola or groundnut oil, they won't burn as readily as olive oil and taste more neutral.
Rub salt and pepper (cracked black peppercorns and rock salt are best).
Heat pan until hot, but not quite smoking. One with a thick base is best.
Place steak in pan for 2-5 mins each side, depending on how well you want it done.
Leave to rest for 4-5 mins.

no doubt not to everyone's taste... but when the puppy's nearly ready to come out the pan I put a thin slice of Stilton on top of it for the last minute of cooking... yum
