COOKING WITH ACE MODDER: Lasagna!

Love home made lasagne but i do mine a bit different.

1. three layers of pasta

2. A few drops of chilli sauce. You can't taste the heat but adds to the flavour

3. I use more herbs and lots of pepper.

4. small diced peppers as well as carrot

5. Use mozzerella cheese, not cheddar

6. A couple of large tablespoons of double cream just before you put the mix in the dish.

I want to go and make lasagne now :(
 
I don't think Mushrooms should ever be in a Lasagne! I like mushrooms though.

Also a layer of Spinach (dried out after being frozen) before the Bessemer sauce goes on top is really nice.

I use half beef and half pork mince too, with half a glass of red wine (add less Pasata so you don't over do the fluid).
 
A soffritto requires a roughly equal portion of carrot, onion and celery. Always
Diced pork or pancetta will make the meat taste that much richer
Sliced mushroom can work in a lasagne I think (works for M&S)
Worcester Sauce is a gamble landed imo; great touch in ragu sauces

Pasticcio will likely be right up any lasagne street too. Meat balls instead of ragu and different pasta (and less cheese)
 
The most important step in making a lasagne, for me anyway, is....

Once cooked let the lasagne cool and then put in the fridge over night. Next day cut yourself a portion, put on a plate and microwave.

So much nicer, in my opinion, the next day.

That is so true - give it time to mature in the fridge :) :D
 
Grating mushrooms :confused:

Grating veg/mushrooms/etc that goes into anything containing mince is a great way to get kids to eat it, once grated it is all of a similar size to the mince so goes un-noticed yet they still get all the goodness. It's also a really great way to cheaply bulk out things like bolognaise if your making a big batch for freezing, chuck in loads of chopped/grated up veg and stuff and you get twice as much without the extra expense of meat.
 
Yo ACE!!! This is a Lasagne I made earlier all the cheese is still molten i made it in a round bowl instead of a wide tray because i didnt have mine in the house at the time needless to say it was gawjus once the cheese settled MMMM!!! I love making lasange its so fun.


Lasagne is somewhat all about the cheese :p gotta have good cheese.
