an edible 1 egg omelette takes only 1minute, an edible 2 egg omelette about 3 minutes, this takes 15+mins?

Yes, but look at it this way:

Fried (2 eggs only!):
1 om - 3 minutes
2 om - 6 minutes
3 om - 9 minutes
4 om - 12 minutes
5 om - 15 minutes
6 om -18 minutes

boiled om (2 eggs)
1 - 10 om 15 minutes

So if you fancy eating more than 12 eggs in 6 omlettes as once, boiling them is onto a winner!
 
This is the longest method I've ever seen for cooking an omelette and the end result looks like an abortion. Your legacy of terrible meals lives on!

I'm pretty sure most freezer bags would leach carcinogenic and endocrine disrupting chemicals in to the food when you boil them, unless you used bags specially designed for cooking. Even then I still don't trust them.

Well I didn't know that. I would have though all modern freezer bags would be safe in that regard but hey.

What you need for an omelette is a well seasoned iron pan, 2-3 eggs, Decent cheese, and some finely chopped onions, ham, etc.

Easy to flip if you have a decent iron pan :)

I would have thought the same but I'd love to know if anyone has any definitive proof of them being unsafe.

That being said, you'll rarely see anything being cooked sous-vide at more than 90°C and the bags for that are made from slightly specialised materials, so there might be a grain of truth in boiling the hell out of 'normal' bags.
