Cooking with Slinwagh: Cheese on toast.

Ingredients

Ciabatta
Plum tomatoes
Buffalo mozzarella
Fresh basil
Extra virgin olive oil
Sprig of thyme
Salt and pepper

Slice the ciabatta, and toast on both sides, place in the oven proof dish, lay on some basil leaves, drizzle with the olive oil and lightly season.

Skin the tomatoes, place in a bowl, pour over boiling water and remove from the water when you see the skin has split, take the tomatoes out of the boiling water and plunged them into some iced water to stop them cooking.

Slice the tomatoes, lay them on the basil, take the mozzarella and tear into pieces and place this on top of the tomatoes, drizzle with the olive oil and season.

Place under a very hot grill, remove from the grill when the cheese has melted and just starts to golden.

Finally tear the thyme leaves and sprinkle over the cheese, roughly chop some more fresh basil and sprinkle on top.

Nice :) Mozarella doesn't really taste of anything though in my opinion..

Get some Buffalo mozzarella and make sure that you have taken it out of the fridge before you use it, this goes for the tomatoes too.

Don't use it straight from the fridge, get them up to toom temperature.

It wasn't really, it took longer to post about it than prepare it, it may sound like a faff but if you think about other then skinning the tomatoes which take a couple of minutes max there isn't a lot else to do.

Its more of an ingredients 'faff' problem for me. My normal cheese on toast: Bread + Cheese.

Still looks nice though.
 
Too much hassle for me, I just toast one side of the bread, then put tomatoe puree and grated cheese on the other and toast that.

boil your kettle and pour the water over the tomatoes in a bowl, after 30 seconds or so the skin will come off easly
 
Looks very tasty. Although what's wrong with just slamming some decent Cheddar or Cheshire on bread and throwing it under the grill? :)
