Cooking with Slinwagh: Cod and Chorizo

Well I did this other other day to try and it was really good so I did it again last night.

You could easily have this as a starter, fish or main course, it is up to you really.

It is as simple as your get really, a case of put everything in a pan and then put it in the oven.

Ingredients:

Skinless cod loin
Chorizo
Picollo cherry tomatoes
Fresh basil
Sherry vinegar
Salt and pepper.

Take a pan and add a little olive oil, take the cod loin, place it in a pan and season it.

Chop you tomatoes into half's or quarters, chop the chorizo in to bite size pieces and spread over the cod.

Roughly chop some basil and sprinkle over the fish.

Place some foil tightly over the pan and place it in a pre heated oven at 200'c for 10 - 15 minutes until cooked, the thicker the fish the longer it stays in the oven.

Finally plate up, pour a little of the sauce in the centre of the place, at the fish and then add a portion of the tomatoes, chorizo and basil, finish with a little more of the sauce drizzled over the top.

It looks delicious, but most cod you'll find in fishmongers/supermarkets etc etc are not sustainable. Please make sure to ask if the fish is sustainable! If it isn't, look for an alternative.
Sustainibly sourced Swordfish, Monkfish, Pollack or Coley would go well as alternatives.

I love chorizo but can't think what to do with it. Any suggestions?

Boil some pasta.

Fry half an onion, a red pepper and a glove of garlic until the onion is brown

Put the onion, red pepper & garlic into a food processor and add a tin of chopped tomato's, 1-2 tablespoons of tomato sauce, 1 teaspoon of sugar, 1 tablespoon worchester sause, add some chilli's (or dried crushed chilli's) depending on strength, salt and pepper.
Blend into a sauce.

Fry the chorizo and some mushrooms .

When the pasta is cooked, drain it and put back in the pan add the sauce, chorizo and mushrooms and let it heat up again until the sauce starts to bubble.

Serve with some parmesan. :)

I will be honest here and say that I have always bought free range eggs and chicken purely because I believed they were better but with out really knowing why, watching the Hugh FW and Jamie Oliver stuff really hit home in terms of what you eat and where it comes from.

I always bought my meat from a butch but now I buy it from a butcher that sources his produce in Cheshire where I live, his sausages are made on site with pigs reared in Cheshire etc etc.

As for fish I do now also buy from sustainable sources, luckily for me opposite the butchers is a fishmonger and ten yards up the road is a green grocer too which is really good!

Where I live in Crewe it is pretty poor in some respects really, a good fair few butchers closed, the greengrocer in the town has closed what was the fishmonger is now an OK butcher to be fair.

It is a shame I have to travel to Nantwich to get my "Local produce"
 
In an ideal world shopping like that would be great, I do buy free range eggs and chicken if I can and good fish but it is so much more expensive, we don't eat red meat really because of this.

Try a spanish omlette:
Preheat oven to 180c.
Boil a few medium chopped potatoes, chop an onion and red pepper (optional) and fry until soft, then take out. Put the pan on a medium high heat and add chopped/sliced chorizo until cooked.
Whisk 5 eggs and mix all the ingrediants together with some seasoning, put in a deep tray and then in the oven for 8-10 minutes (until it's cooked!).
