Cooking with Slinwagh: Cod and Chorizo

Try a spanish omlette:
Preheat oven to 180c.
Boil a few medium chopped potatoes, chop an onion and red pepper (optional) and fry until soft, then take out. Put the pan on a medium high heat and add chopped/sliced chorizo until cooked.
Whisk 5 eggs and mix all the ingrediants together with some seasoning, put in a deep tray and then in the oven for 8-10 minutes (until it's cooked!).

If your pan has a metal handle, you can just stick that in the oven. I do it, saves a bit of washing up! :p

I did that once, and took it out and put it on the hob when it was done. But some reason i thought "I'll just stick it in the sink to soak it", grabbed it with my hand....................burnnnnnnnnnnnnnnnnnnnnnnnnnn. Ouch :(
 
Cod and chorizo goes really well together. I prefer chorizo on my pizza to salami or pepperoni, too. Lived on it when on holiday in Lanzarote.

Was just about to say the same thing.

5 ingredients, all bunged together and baked is hardly elaborate.

Looks nice, I love chorizo.

Slingwagh maybe you've tried GR's chorizo, red onion and butter bean soup? Delicious.
