Can i have some more detail instructions for the potatoes please :o


Just did a quick trial run and that ended horrifically badly >.<

the butter burnt part way though so obviously it was kinda ruined at that point but carried onto see how it would cook them, and ended up with badly burnt soaked in horrific black soot filled butter liquid and stil lraw on the inside after the 20 minutes :o

The way I do fondant potatoes is slice them into the barrel shapes and place in a pan, can only be one layer thick. Fill with water to literally just cover the potatoes and add the large quantity of butter. Now bring to a gentle simmer and allow water to evaporate by 1/2. Very carefully turn the potatoes over and again reduce till you are left with a thick butter sauce. Spoon sauce over the top and place in a preheated oven 160ish for about 15-20mins or until golden.

Hi, sorry it turned out badly :(

I melt the butter in the pan on a lowish heat. It gets foamy and once that happens put the potatoes in for 5-6 mins. Then turn them over for another 5-mins. You must have had a high heat to burn them, dont forget butter itself will burn at a high heat and taste bad.

Pour in your boiling stock with the garlic bits in and let it simmer with a lid on (leave small gap for steam to escape) for about 20 minutes.

yeah was only a trial run, proper meal isn't till tonight :p

Yeah it was the butter that burnt not the potatoes, butter went from nice light foamy like pics to black water in like a second half way though :o


what heat would you say for the simmer/stock part?
 
Just done a lunch for Valentines Day. Made the scones this morning. Dont laugh at the ryvitas but she is not having bread at the moment so i improvised :rolleyes:
