I started learning to cook when I met my other half, a year and a half ago. Since then I can manage basic things (e.g. chicken curry using those jars of pre-made sauce), however I'm now experimenting making my own from scratch. First couple of attempts weren't great (waaay too spicy, and not so tasty :p) Wanting to keep my meals fairly simplistic and low-budget though.

A couple of curries I'd like to master are:
- a chicken masala or similar, with a nice thick creamy sauce (without buying a jar of sharwoods :p)
- a mince keema (love mince and it's cheap)

Have been googling for inspiration, but would love to hear some recipes and tips of the above from ocuk's food gurus. Plan is to attempt one at the weekend (after payday!) + pics if it doesn't go wrong

Madhur Jaffrey's chicken kadhai is dead easy. The sauce can bit a little watery if you're not careful, but it's so easy and quick to make and delicious too!

Most of her recipes are worth a look, they're what got me into coking curry at any rate.

I was relaibly told by an indian friend that most indian families use a very basic recipe.

Fry onions in oil (or ghi) until transluscent, throw in whatever spices you fancy, mix with onions and cook on a low heat until the spices have cooked through, raise heat a little and slowly add a tin of chopped tomatoes to the mix (don't add them all at once try to keep the mixture simmering as you add the can) once done throw in chicken and whatever else you want, cover and simmer until meat is tender.

I am partial to a pataks paste though....

Close, but the spices don't go in that early. They will go in after the tomatos go in. Some spices won't go in until the very last (like garam masala).

I have been looking at a number of recipes on http://www.greatcurryrecipes.net that I want to make but I need a supply of spices to make them, has anyone a good site that sells a good selection of spices and does not charge a fortune for delivery?

I am looking for:
Turmeric
Ghee
Garam Masala
Ground Cumin
Cardamom Seeds
Cumin Powder
Coriander Powder
Fenugreek Seeds
Fenugreek Leaves
Garlic/Ginger Paste

Sainburys sells it all.

No Asian food markets down in the South East for some strange reason, and supermarkets sell small amounts at high prices but I have just come across http://www.theasiancookshop.co.uk/ whichs looks decent and price wise its good too.

www.wingyipstore.co.uk will probably have better prices - they also sell wholesale amounts - they supplied the cafe and I usually buy 5kg tubs of curry paste (Mae Ploy) if another friend asks me to cover for 25-50 at his club - Coconut Milk gets expensive when you need 80 tins... Better to buy in 10l drums!
