Egg curry

Could be nice, just really poor presentation. Maybe dice the eggs more and mix into the curry, the contrast in colours bothers me the most. A nice plate, ingredients mixed evenly throughout the dish and evenly sprinkled garnish/spices on top, makes all the difference.
 
Never had 'egg' fried rice with a curry? Sticking boiled eggs on the top of a curry is a little weird, but still...:)

The fact remains that egg fried rice will probably have at least 1/2 of an egg in their maybe 1 if you make it yourself, but 3 1/2 boiled eggs is just arse wasps waiting to happen.
 
I have indeed found another Egg curry recipe. It seems to be a popular side dish in India.

Ande Masala

6 Tablespoons Corn oil
2 Large Spanish onions, finely chopped.
400g tin tomatoes
2 tbs tomato puree
salt
4-8 hard boiled eggs.

Spices:
1 tps tumeric
1 tps cummin
1 teaspoon garam masala
1 teaspoon coriander
1/2 teaspoon chilli powder.

Cooking:

Fry onions till golden. Mix the spices in a little water to form a paste then add to the onions with a little water. Add the tin of tomatoes and puree. Cook for 10-15 mins and salt to taste.

Add the eggs then off you go.


Still sounds disgusting to me.

True, that's a lot of egg for one sitting. Plus, i could never eat curry without rice, or use boiled eggs as a substitute for meat. I'm sure it looks a lot worse than it tastes.
 
Looks OK to me!

Would be more appetising with potato chunks though. Om nom nom...
 
I don't see what everyone's problem is with this? It looks just like any other curry, but with eggs in.:confused:

I'd be happy to eat that, it sounds really nice.

All this "it looks horrible" is rubbish: food's for eating, not for looking at...
