Eggs: Refrigerate or room temp

I cant believe theres such debate on this matter when browsing the net.

I've always refrigerated mine purely under the pretense they may keep longer. That said, they do definitely crack/mix better when stored at room temp.

I have 24 lovely farm fresh eggs that have beautiful orange yolks unlike the pale shade of yellow supermarket ones. Theyre devine. So how to store?

Opinions?
 
Oh well, that's the proverbial can of worms open. This ought to get interesting!

If I buy supermarket eggs, I store them in the fridge and take them out an hour or so (if possible) before using. If I buy fresh eggs, I only store them in the fridge if they've gone unused for a week or more.

However, supermarkets do not.
But, rather annoyingly, eggs tend to come in on the refrigerated lorries, or at least they did in my day.
 
Cupboard, always the cupboard. Shops never do keep them in the fridge, and Delia advises against it (mentions something about them cracking and curdling in cakes when too cold).
 
Room temp, absolutely pointless refrigerating, it achieves sod all.
Well, it makes them colder. And I tell you what, it certainly helps older eggs retain their shape more effectively - ideal for frying and poaching, not so much use for other purposes though.

In other news though, what the hell have you done with your username?!
 
I treat them the same way as raw meat. Store in fridge, remove from fridge well before they are going to be used. Also there is more room in my fridge than there is in my cupboards!
 
kitchen bench, i keep up to 90 eggs on my bench over the period of a month and never have an issue with them
 
Not in the fridge - I keep mine in a bowl on the worktop. I used to store them in the fridge - keeping them on the worktop suits me better.
 
I do keep them in the fridge but only as we don't go through them that quickly and so just feel they will last better for longer? No fact behind this mind.

Saying that, we always bring them up to room temp for baking, meringues, cooking in general etc. as they behave better.
 
Eggs will keep for something like a month past their use-by date in the fridge. Of course I use them before then but when you buy a big box it's handy to know that you don't have to rush to use them up. If I had a nice cool larder I would think twice about using the fridge though.
