Eggy Bread

We have eggy bread quite often at ours, our baby loves it too. But I went to a french cafe the other day and had to try their French Toast.. Which was ofc eggy bread, nice doorstep slices, with cinnamon on top and served with strawberries and cream. fantastic! Now I need to buy some cinnamon :)

If I'm not mistaken you cut a hole out of the bread (cookie cutter will do) and start frying the bread with said hole in it, crack open an egg into this whole and fry the lot leaving you with a tasty fried bread and egg combo.

My mum used to call them "Ranch House Eggs". Don't know why. They are good though. Especially with a bit of Tommy K.

I make eggy bread by frying a piece of bread butter side down and then just dropping an egg on top and breaking/mixing it with a fork. Let it soak in a bit and then flip over to finish it off. Much quicker/easier than pre-soaking on a plate and tastes nicer too in my experience.

For extra credit, cook two bits up in a bacon pan and use them to make a bacon sarnie.
