Erm weird question... about potatoes

Here's how I do it;

-wash and peel potatos, taking ages and getting peel everywhere.
-heat pan of water until its boiling
-chuck in whats left of the mutilated potatos
-bring back to the boil and simmer for 20 minutes
-drain pan
-pick out the ones which fell in the sink
- add huge knob of butter (but no milk) + teaspoon of mustard

mash it all up, but not so much that it becomes paste.

I sort of do the same, except add some salt to the boiling water, and leave the skins on. Mash with skins is mint, gives it some texture as opposed to mush.
 
I have a question to add, if you fry potatoes, i know its usually ones that have been boiled first and left to cool, but can you do it with raw ones, and what times heats etc would be best?
 
I think they would have to be thinly sliced and i would just fry them until they looked done! have the heat quite high.

Yeah, I'd say provided they are thinly sliced they'll be fully cooked and soft in the middle by the time the outside becomes brown/crispy.

Too thick and they'll be done on the outside but leave you with a slightly firm centre and uncooked potato taste!
 
I usually boil them for 15mins with some salt in the water, and then mash them with loads of butter.
Unless you don’t cut the potatoes up I’d say 20mins+ is far too long!
 
My mum and grandma often fry potato without boiling it first.. usually cut into around 1cm squares and they're fine. But I don't know how long for etc
