Dev's Awesome Tagliatelle Carbonara

Ingredients

5 teaspoons olive oil
5 Rashers
250g Fresh Egg Tagliatelle
3 egg yolks
250ml heavy cream
1/2 cup shredded Parmesan cheese


Directions
1. Heat olive oil in a large heavy saucepan over medium heat. Stir in bacon, and cook until it is cripsy. Remove from heat.

2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain pasta, then return it to the pot.

3. In a medium bowl, whisk together egg yolks, cream, and shredded Parmesan. Slice rashers, then stir into the cream mixture. Add mixture into the pasta pot and be very sure to take off heat otherwise egg will scramble. Season with salt and pepper.

Eat with girlfriend and white wine. :)
 
If you like lamb you should love this simple recipe :)

Diced lamb (500g)
Tinned Apricots (or dried just leave them to soak in boiling water)
1 tsp cinnamon, ground coriander, paprika and flour with salt and pepper to taste
2 medium english onions.

mix all the spices together and add the diced lamb, leave to marinade for about 20-30min (if using tinned apricots you can add the syrup for a sweeter taste)
Fry the onions till soft

Place the onions, apricots and lamb to a casserole dish and add about 1/2 pint of boiling water. Place in the oven at 180C for about 1h30min till the lamb in tender.
Add some fresh coriander and serve over rice :)
 
Chocolate French Toast

2 slices of brioche (or thick cut white bread)
1 Free range organic egg (only joking)
Bar of chocolate
Knob of Butter
Icing sugar

Make a sandwich with the brioche (or bread) and the chocolate. Break the egg into a bowl and whisk until frothy. Dunk the sandwich into the egg and flip over to ensure both sides are soaked.
Heat a frying pan and then add the butter to melt. Fry the egg soaked sandwich in the butter until brown on both sides.
Serve dusted with sieved icing sugar

1 bannana
butter/marge/whatever if required


get bread
mash bannana onto bread
eat like a king

My mom's chili sauce for pasta:

Serves 3-4:
-500grammes of mince (as low fat as possible)
-one large onion
-3-4 pieces of fresh garlic
-one red pepper
-3 fresh chilies (medium to strong strength)
-one can of chopped tomatoes
-200-300ml of water
-fresh oregano

Dice onion, garlic, pepper and chili, cook on high heat for 2mins.
Then add the mince and cook untill it's brown.
Add the chopped tomatoes, oregano and water, put a lid on the pot and simmer for atleast 5 hours.
Might seem a long time but makes the taste soo much better.
My mom always makes this when i'm home :D
 
Hot Chocolate Fondant

Ingredients for 2

2 tsp chopped Hazelnuts
55g 60-75% cocoa plain/dark chocolate
50g butter (unsalted preferably)
45g plain flour
60g caster sugar
1 large egg + 1 extra yolk
1 heaped tsp coffee powder
1tsp vanilla extract


Preheat the oven to gas 3 (170c)

Butter 2x 3" Ramekins

put some of the hazelnuts in the bottom of each ramekin

place the butter and chocolate in a medium sized microwavable bowl
put on full power for 30 secs, stir then blast again for 10-20secs until you have a nice runny liquid

now add the rest of the ingredients (adding the eggs last)
using a whisk or fork beat the lot together until the mixture looks well blended

share mixture between ramekins

place in the oven on a medium shelf for 20-22 mins

when done turn them out over the serving plates/bowls

serve with vanilla ice cream, or pour a little double cream around the edge

once eaten, return to kitchen and make again :)


p.s. i take no responsibility for anyone who gets fat due to eating these :p
 
Slow Cooked Beef & Cheddar Mash

  • Decent size piece of Topside of Beef for roasting
  • 4 Medium size shallotts
  • 1 Bottle of Shiraz
  • 2 Knob of butter
  • 2 large maris piper potatoes per person
  • 4 Oz of your favourite cheddar
  • 1 Clove of garlic
  • Salt & Pepper to season
  • 1tsp of dried Rosemary

The above dish can be achieved with Brisket also. Usually a cheaper cut of beef but if you cook on a lower temperature for longer then the gravy does not reduce and you get a really really joint of beef.

Start pre-heating your oven to 325 degrees. Or if you have the time do this in the slow cooker if you have one

Coarsley chop the shallots & Garlic and caremelise them with one of the knobs of butter Add half the bottle of Shiraz and the Rosemary.

Wash your beef & put beef in dish or slow cooker and cover with the sauce.

Put lid on and cook at 325 and allow 45 minutes per pound or in a slow cooker around six hours. Turning every hour or so.

Wash & Peel your potatoes and par boil them just before you are ready to eat the beef.

Remove beef from overn or slow cooker and let it stand for 15 minutes. Then carve to thickness required.

Mash potatoes and add your Cheddar & Butter.

The sauce from the beef should be put in sauce pan and reduced down by half to give a nice beefy but sharp gravy served with your Roast Beef & Cheedar Mash. You may want to add a splash of the Shiraz in the gravy

Serve hot with the remainder of the Shiraz for a hearty and tasty meal that doesnt cost the earth ;)
 
MMmm Gorgeous recipes... Really ought to try that belly of pork one as I rarely cook pork and when I do the crackling never works ;op

Ok only thing I can think of worthy to put on here at the moment...

Seafood Rissoto

1 tbsp Olive Oil
1 Tbsp Salted Butter
1 medium Onion
1 clove of Garlic
Safrron
Bay Leaf
Black Pepper
Chicken stock cube
Risotto Rice
Mini Sweetcorn
Mange Touts
Peas
Uncooked King Prawns
Smoked Haddock

Loads of variations on this recipe but this is the one I coocked last week and it worked really well...

Heat the Olive Oil and butter in a risotto pan
Finely chop the garlic and the onions and soften in the butter and olive oil.
Add the risotto rice stiring it to ensure a good coating of butter oil etc is coating all off the grains.
Add about a 1/2 pint of boiling water the saffron and chicken stock plus any other herbs you feel like at the time! (Personally I like a bit of basil and corriander in with seafood.)
When the first of the water is just about gone add the peas and mini sweetcorn. Add more water and turn down to a light simmer with the lid on the rissoto pan.
Take the skin off the haddock and cut it into small pieces. One haddock fillet is enough for two people in this recipe any more overpowers the dish.
Add the smoked haddock and the mangetout to the risotto. Stir, and add more water if needed.
Skin the King Prawns (should be blue in colour if they are raw!) Scewer them into the portions you are intending to serve to each person.
Keep an eye on the risotto and just as the last of the water is being taken in turn off the heat and lay the uncooked prawns on top of the risotto. Put the lid back on the pan and leave for 2 minutes.
Turn the prawns over, recover the pan and add a little heat for 2 minutes.

Remove the scewers and serve the rest of the risotto onto plates. Then garnish with the prawns.

Sorry not too exact - I've never had a recipe for risotto just worked out something that works for me over a few years! General rule of rice, stir as little as possible, it's cooked when soft! This dish WILL burn to the pan if you don't pay it enough attention.
 
Secret too a good creamy Risotto is some grated Mozzarella or Parmesan and a splash of dry vermouth. But that sounds pretty damn awesome Beren. Will give it a try

5. To serve, share the rice out evenly between three or four dishes and spoon over portions of the lime and coconut chicken. Sprinkle with remaining coriander and the remaining spring onions and serve.

Minus 10 points for spelling Breasts incorrectly.

Vermouth... Mmm sounds interesting... I often mix half white wine half water in the first stuff to go in the pan... adds a lovely flavour.
 
This is my favourite one, and great for impressing your other half, and its very simple and easy to make ;)

Salmon Curry

4 salmon filets (skin removed)
3 table spoon lemon juice
3 table spoon white rum
3 table spoon lemon pepper

50 g of lard (I use Olive oil)
1 chili
150 g shrimps

1 bunch of spring onions
2 carrots
1 ripe mango
4 garlic

250 ml coconut milk
1 table spoon spicy chili sauce (not sweet)

Marinate the salmon (no skin) in the lemon juice, rum and lemon pepper for 30 minutes. Heat the Olive Oil in the wok, add the crushed garlic, chili and salmon and shrimps (I wait a few minutes before adding these) for about 2 minutes. Then add the onion cut into small circles, the mango cubed with the finely sliced carrots. Cook for another 4-5 minutes.

To finish add the coconut milk and chili sauce until hot.

Serve with rice. :)

My Chilli

Chilli recipe (feeds 8 :cool: )

garlic x5 cloves
onion x1
Minced beef 800-1000g
Oxo cube x2
Cumin (loads, I use atleast a 3rd of a container)
Hot chilli powder (as much or as little as you like, I don't use too much)
Tomato puree x1/2 tube
Mixed Peppers x3
chopped tomatoes x2 cans
bay leaves x3
Oregano (loads, I love this stuff, I use about half as much as I use cumin)
Kidney beans drained x2 cans
Baked beans x2 cans

To taste:
More cumin
More hot chilli powder
Worcestershire sauce
Tabasco sauce

Rice 1:2 parts water
Bring to boil, simmer with lid half on for 10 minutes.

Serve with Garlic bread :)

Please can we have loads more rice dishes :D (preferably chinese)
 
I would also love to know how to re-create tesco's finest fruit flapjack! (the one with sesame seeds etc in) that stuff is too nice and working out quite expensive!! Would love to be able to make my own! :D
