No high rated in form is worth it over their or anybody else's NIF really. Second in forms onwards are where you're going to notice a difference stats wise over NIFs.

Edit: That said, try 442. You don't need to worry about converting a CAM or CDM to CM. As long as they're loyal and have the manager bonus they'll get 10 chem.
Toure and Eriksen are a nice pairing. Or you can hybrid in Hernanes or Modric if you want. With 442 hybrids you'll generally have half your team one league and half your team another. As long as the ST, CM and CB have one green link they'll get max chem.

4-2-3-1 (2) Isn't really overly defensive you just have to play a more controlled passing game and manually move your team forward relying on a lot of side passes and not being afraid to pass backwards to commence a forward play again. With the correct CDM in any formation they will move forward and join the attack, only difference is the correct CDM will get back and do their part to defend also. That's what i have found at least.
Main downside is that it is balanced, not very atacking or defensive.
Personally, ditch your wingers, you've spent way too long mlling over 433 & 41212 etc.. go 4222, try some decent CAMs and see how you go with a full turnaround on your team rather than something ever so slightly different than something you have used to death!
Failing that, 451 maybe? Or 451-2 to learn how to play a slow buildup.
