Nothing wrong with what you've chosen here but I'd go for XFX or Corsair

Are you set on two 6850s? Something like:

Might be a better bet?

I can't comment on the watercooling sorry I don't know about this. Generally good choices. You might want another hard drive? The SSD is quite small.
 
SSD:
Crucial RealSSD M4 64GB 2.5" SATA 6Gb/s Solid State Hard Drive, quicker and more stable.

RAM:
Corsair Vengeance Low Profile 8GB (2x4GB) DDR3 PC3-12800C9 1600MHz Dual Channel Kit, would give you sightly better CAS timings and only a few pound more or go for the full sized Corsair Vengeance 8GB (2x4GB) DDR3 PC3-12800C9 1600MHz Dual Channel Kit.

GPU:
FX ATI Radeon HD 6950 XXX Edition 2048MB GDDR5 PCI-Express Graphics Card, was a sightly better clock speed and Open GL 4.1 support (instead of 4.0) which should make your games abit smoother.

All in all your spec is pretty sound tho.

Okay. Can completely agree with the SSD and the power supply. As to the graphics.. I'm planning on installing a bit of Apple magic.... not 100% sure that the 6950 is supported wheras I know the 6850 is.
