Please could some of you give this a once over? It wouldn't be used for gaming, so no GPU is needed (I'm going to use an old 7300). It will be used predominantly as a virtualisation platform.

I definitely want the i7 due to the hyperthreading support over the i5. Are the motherboard and RAM reasonable choices?

I have a 550w PSU that's 3 years old; would this PSU support this spec, or is it worth purchasing another?

mobo and ram are fine, but Id get the K variant of the CPU, even if you dont plan to OC it has better integrated gfx and will hold higher resale value.

You can use the onboard gfx rather than your 7300, itll be quieter and draw less power

Id get a better quality PSU such as

Corsair CX 430

Lepa W Series 450

BeQuiet PurePower 530

If you want to keep noise down it may be worth considering an aftermarket cooler, something like the freezer 7 pro would be huge steps above the stock

And lastly Id avoid Hitachi HDDs, look at Seagate, Samsung or WD

Your PSU should be fine, no need to get another one IMO and it will save you £50 or so.

EDIT: And there is no need to get anything like a 750W PSU for that system, it probably won't draw more than 200W ish!
