FSX is what you make of it. Most of the default stuff is a bit boring but there are some inexpensive add-ons that can perk up the scenery resolution and terrain/airport textures. All sorts of add-on aircraft from the fairly simple fare churned out by Just Flight to the complex procedural stuff from PMDG and Level D.
The only caveat is that even following the updates and mods made by Dovetail Games who adopted the franchise from MS, there are still compatibility issues on modern hardware and operating systems. For example I can't get the "follow me" yellow taxi line to appear. The Dovies are supposed to be working on an all new flight sim, but it has gone a bit quiet on that subject of late - probably because they're working on Train Sim World - the successor to Railworks/Train Simulator 20xx
One fun thing to look at is a world tour. Google is your friend to find itineraries people haved devised but one of my favourites is the Extreme Approaches at Drzwiecki Design http://www.drzewiecki-design.net/ddatWF2009.htm which will test any pilot's mettle.
A virtual airline might be of interest though my experience of these is they are either run by a dyslexic 9 year old or a bunch of anoraks who take it more seriously than a real life professional pilot.
