Found this chap in a freshwater brook.

My last landlady had a license to trap them in a lake on her property. She had a few traps. They were prolific though and were a nice snack once cleaned out in a cage in the adjacent free flowing stream.
 
and if you are going to catch them..wear gardening gloves and they nip like a bugger!

but lordy they taste good with loads of cajun spices...a bucket of crayfish simply cooked was some of the best eating we had in texas

The south does some amazing food. If you ever go back, go to Louisiana/Mississippi - the food is incredible. Massive pots of crayfish and prawns on the boil, gator, snake..it's ace.

A friend a few years back went fishing somewhere in Teeside, each time he cast out the bait 5 minutes later he'd reel in and there would be at least one Signal Crayfish on the end of the line. At the end of the day he had a bucket full. I'd heard they taste nasty from sitting in silty water and you needed to put them in a bucket of clean water for a couple of days, changing it every 12 hours to at least get some of the gunk out/off them.
 
Yeah they need a couple of days in fresh water. Not sure how nasty they are without purging though. I'd assume quite on the basis that the water we get them from is very silty...
After a few days they go in a large pot of (as mentioned earlier) cajun spiced simmering water for a few minutes. Nutcracker for the claws and jobs a good 'un :)
 
yeah, we're not going to be eating it :p

Apparently my Mum has seen 'them' a couple of days ago so i guess its quite happy where it is. Taken another look but I haven't found any others ... yet.

more importantly if they have not been seen in the area before it might be worth notifying the Environment agency as they really want to keep track of their movements and spread

Ill feed that back to my parents, leave it upto them to decide.

I know the Signal crayfish is a bad immigrant, killing the natives etc. But if they are bigger, doesn't that make them better for eating?

I'm just struggling to see a disadvantage here :p I mean, if some invasive cows that were twice the size of normal cows but tasted just as good came over and started pushing out all the normal cows away, would farmers be complaining?
