Going to echo another vote for FTL, fantastic game. Since no one has mentioned it, I quite often play Game Dev Tycoon when I want something stress free and a bit mellower.
 
Golf It!

Mini golf game, loads and loads of user made courses ranging from atrocious to really well done, but all great fun. Hilarious with a few mates too :D
 
Any of the PixelJunk games - Monsters, Eden, Shooter, Nom Nom Galaxy. Every one of those is a fantastic game and quite unique. Everyone should play them and you could probably get all four for <£10 in the upcoming summer sale (7 weeks).

I've had a look at a few and will maybe pick a couple up, nothing jumps out at me on first view though.

Decided to have a look at some games I already own and haven't played/very low hours and see if I can get into some of them. I have some with literally minutes played on them :o

A few people have mentioned FTL, completely agree but I'll also add 'Into the Breach' by the same people. Absolutely fantastic game and easy to pick up and get started, plus it doesn't really take long to complete a game.
 
BTW, I'm not entirely happy with the 'Casual Games' moniker for the type of games the OP is requesting.

Of my three recommendations, two (FTL and Volgarr) are properly hardcore when it comes to difficulty (and the third, mark of the Ninja, is by no means a pushover). And many others' recommendations are similar.

Depends what you think of as 'casual', I guess. I have very limited gaming time, but when I do play I like to play very hard games - I just find it difficult to reconcile those sort of games with being 'casual', even though I guess my lack of time and dedication to gaming might make me a 'casual gamer'.

Certainly, I wouldn't class any of the recommendations in the Wiki list of 'casual game' genres:

Farming Simulator 17. It doesn't get more casual and chilled out than that tbh, and it plays really well on an XBox controller if you have one. Put Netflix on, or some music, and get ploughing them fields! Plus, tractors are flippin' awesome. No, seriously, they just are!

OP doesn't mean it in the traditional sense. More games that you can dip in and out of without completely losing track of what's going on or losing all track of the controls (so I'd guess no huge metroidvania's like Hollow Knight or complex RPG's) -

So what games can easily be dipped in/out of without a learning curve steep enough to put you off for life?

Doesn't have to be chilled out or no action, but more something that doesn't have a macro for every key on the board that has to be become second nature or get insta gibbed. Basically anything that doesn't require that you live on it 8 hours a day just so you can enjoy it.
