Gas vs induction

We moved to a induction hob last year and it was great. The only thing I've found you can't use is a round bottom wok.

We've moved house and the new place has a gas hob and I really miss the induction
 
hmm thats one option

she still wants a ranger cooker. i do have to say they do look smart, so confused.

Wear her down. Show her graphs detailing your need to move vs cooking quality I tell you!

Explain that while you cook, she could be cleaning the oven.

Fair point. Can't say I've ever had any issues using a flat bottomed wok on electric or induction. Maybe I've just never experienced the true delight of cooking by an authentic wok.
I've used both a normal wok on gas and a flat bottomed one on induction and they both work just as well as each other in my experience.
 
imo you need a high end induction, where gas is essentially gas.
a 5 burner gas with the centre one being a 5kw+ wok burner, is where I would go. Unless you are willing to spend the money cheaper ones tend to have very few steps.
only tried it round a mates I do like them, but price point just doesn't make sense to me at least.

I don't see the pans as an issue, most are induction these days anyway.
 
I was an induction sceptic due to the wok issue mainly, and with things like as soon as you lift the pan it stops heating.

However the looks and practicality have outweighed the cooking compromises, which you can work around anyway. I also find it gets pans hotter and therefore does better steaks, though I'm aware that may be because my previous gas cookers weren't that great.

It boils and heats things more quickly than a comparably expensive gas equivalent.
 
Have had conventional electric, then upgraded to induction.. Moved house a year ago and we now have a range cooker (lacanche, previous owner paid over £4k for this oven!), Gas hobs with electric oven.
Will be moving back to induction and twin high level oven as soon as we redo the kitchen, range cooker is good (but not great, and if I had paid full price i would be :( :( ) but induction is so much better than gas imo, and the oven being on the floor is awful! So twin oven at sensible (not bending over) height and a good induction is the plan.

Not really got an opinion on induction gobs we were tempted for our kitchen refit but when buying a 2k range cooker moving away from gas was too much of a gamble! I did make sure we had suitable eiting installed should we be tempted in future!

The oven thing though I would always if possible have a high level oven they are just so much more practical and that's from someone who is just finishing a very expensive kitchen transformation that includes a 2 grand range cooker! We have no full height full depth units in our kitchen as none of the designers we spoke to could come up with an acceptable solution and neither could we!
 
I've always preferred to have a gas hob where possible but would consider induction after hearing many positive reviews on them.

Ovens on the other hand, I would never go back to an under hob or low mounted one after having an eye level one installed. It's so much better in every way. This would win any argument about having a range or not in my books rather than the gas/induction argument.

Mind, I have nothing against electric cooking really. there are advantages over gas especially in an open plan home. But as a matter of principle I aim to have at least one room that can be heated in a power cut and one means of cooking during a possible power cut too.

Yes....Maybe we should buy a lighter or some matches. But its so hard to light gas by rubbing sticks together.
 
All you surely need is a butane camper stove and a waffle iron? :)

I guess it is a generational thing (How old are you if you dont mind me asking?) I remember the 3 day week and rolling 6 hour power cuts all through the winter. Back then "Most" homes were heated with solid fuel (Many cooked with it too).

Electricity was basically for light, Fridges, radio and TV. Modern society would be a lot more vulnerable to the consequences of extended power cuts than we were back then :/

I don't remember the 3 day weeks or brown outs... or 17% interest rate mortgages. But I'm sure it was pretty close (I'm 43)
 
I find with gas while it can make you pans hot fairly quickly it's a pain to control at lower temperatures. Induction is safer then gas IMO and gives you better control at lower temperatures.
 
I have induction and prefer it to gas. It's much quicker to get things up to temperature fine for me to control the heat. It's also far easier to clean and safer because the hob itself doesn't get that hot.

Also no danger of accidentally leaving it on - my mum left the gas hob lit once for an hour and I only realised about an hour after she went out. She also left it on and unlit once too.

Prolonged power cuts is not something I think most of us need to worry about these days (barring catastrophic events). However if it happens I have a gas bbq and a gas and wood pizza oven ready to take over.
 
Love our induction hob, so easy to clean and gives almost the same control as gas. Pans were easy to find, most if not all of the decent brands have a induction range.

If I were big into my cooking I'd of considered going gas, but induction gives very similar results in a easier package imo.
