Tofu and vegan cheese are both having a really good growth period in supermarkets. Loads of types. Depending on how firm you need, Cauldron is a good shout. It's a white carton with plastic film lid (printed not clear).

It's in water so you need to drain and ideally press it. Even press it down onto paper towel if you can. But it's firm enough to hold shape while crumbling if you push it. I chop loads up, put smoked salt, maybe paprika and garlic powder, fry in oil, vegan scrambled eggs. Add extra seasoning and I can use it as tuna for tuna mayo.

There are firmer tofus if you want it to replace meat chunks, smoked stuff is often like that. Cauldron is everywhere though.

Experimented with a "tuna" "mayonnaise" last week. Perfected it tonight, lush and enough for 4 portions in 30 minutes. Recipe:

Put pasta on (I like conchicglione as it holds pieces well) as everything else will take the same time.

Chop 1 onion finely and start frying with a little olive oil

Chop a block of tofu (250-400g depending on packaging as it's wet). Cube it up small and don't worry about breaking it a bit. You want uneven sizes like flaked tuna. Sprinkle garlic powder, smoked paprika and salt (I used truffle salt as it's here and adds some aroma). Chuck it in the onions pan, drizzle with vegan fish sauce or light soy sauce and stir.

Mostly leave the tofu on a high heat, let it burn on and get crispy with just a stir every few minutes.

Tip one tin drained kidney beans and one tin sweetcorn into a big bowl. Chuck on top:

3-4 tablespoons mayonnaise
Splash single cream
Good squirt mustard (I used american style, 1-1.5 tbsp)
Good squirt sriracha or chili sauce to taste
Stir to mix

Throw the tofu on top and stir in. Drain the pasta and stir that in.

Serve with crispy fried onions on top.

Easy, pretty cheap, and goes in a lunchbox for lunch at work hot or cold!

We've been cooking some vegetable currys recently with reasonable success.

Great for clearing out the fridge of veg on its way soon! Were still making our way through our glut of onions from the allotment :).

I've been vegetarian for last couple of months and I often find veggie meals quicker to prepare than ones contains meat . Some ideas

There are loads of shop bought things you can take advantage of including quiches , vegetarian sausages Pies and lots of meat replacements

Eggs - egg chips and beans , omelettes, shakshuka

Vegetable tagines, I make a nice green lentil casserole with bistro gravy, mustard, garlic and root veg

I’m a huge fan of Rupy, author of The Doctor’s Kitchen. We’ve swapped a load of regular weekday meat containing recipes for veggie dishes from his books. The especially great thing about them is that they’re pretty easy to put together and are definitely possible midweek. A number of them are suitable for batch cooking and reheating for either lunches or a midweek super quick dinner. I love collecting cook books, but his two are easily the most well used that we own.

His latest book “Eat to Beat Illness” has some awesome recipes in it. Butternut and cashew curry is one of the most delicious meals I’ve ever managed to cook. There’s also an aubergine, walnut and lentil ragu which is to die for.

His black bean chilli (I think in the first book) is incredible. It’s also easy to make and scale up, so you can make a vat of it and freeze it for later.

The books are really worth getting hold of. Good recipes on the site too of course!
