Nope, the difference was Essien had his arm in the air... they're not normally given when your arm is down by your side and the ball gets booted against it like yesterday.
Nope, the speed the ball is travelling at and distance to the player is also to be taken into consideration. The letter of the law also states that it must be intentional hand ball. It's not as cut and dry as you say it is and both could easily have been given and justified. Also for Essien, it looked to me that his arms were more in a face protecting position rather than up there to deny a goalscoring chance.
The justification for both of the penalty claims in the Man Utd Fulham game being denied was really that the ref didn't have a good enough view in both cases.
