it'll be overdone. I just like my cow's to be gently introduced to the concept of cooking before carving a stak off eating it

seriously though, I've always found that an hour or more (overnight is best) of marianading in red wine with salt and pepper and a few crushed mustard seeds is best. the red wine breaks down the texture in the meat and tenderises it, the acidity seems to almost cook the meat meaning that a blue steak is actually cooked in a way.
anyway, after typing that I'm off to the shop to get me a steak for tomorrow

EDIT: I forgot, cooking, I use a very hot griddle pan (a frying pad will do fine) and only turn the steak once. bung it in, cook 1 side (about a minute for me 2 for medium rare) turn the steak and cook for another min, remove from heat and let stand for a bit.
I always use the remnants of the marianade to make a sauce with pepper and cream or onions
